Giant Sub
Yields 4 to 6 servings
1 large French Bread, approx 24 inches
*Mayonnaise Dressing (recipe follows)
¼ pound sliced bologna
¼ pound sliced honey-baked ham
¼ pound smoked turkey breast
¼ pound sliced cheese, such as Swiss,provolone or American
Shredded lettuce
Sliced tomatoes
Pickle slices
Cut French bread in half lengthwise. Spread mayonnaise dressing on both pieces of bread. Arrange the cold cuts in layers. Dress with lettuce, tomatoes and pickle slices. Cut into four or six pieces and serve.
*Mayonnaise Dressing – Yields 1 quart
½ cup chopped onions
1 tablespoon Worcestershire sauce
1 tablespoon Cayenne
1 tablespoon black pepper
1 tablespoon yellow mustard
1 tablespoon fresh lemon juice
1 tablespoon ketchup
1 quart Blue Plate Mayonnaise
Put onions, Worcestershire, cayenne, black pepper, mustard, lemon juice and ketchup in a food processor and pulse two to three times to blend. Add the mayonnaise and pulse several times to blend. Store in the refrigerator in an airtight container for up to two weeks.
